One of the most common breakfast meals you’ll find on our table in the morning is baked oatmeal! This is the easiest dish that tastes like it took hours to make. I’m all about that, ya know. Anything that makes me look good in the kitchen is something I make because this mama is NOT the best cook around. When my sister-in-law made this breakfast dish for me a few years ago, I instantly asked for the recipe and can’t even tell you how many times I’ve made it.
It’s rich, filling, sweet, but not overwhelmingly so. I love to add bacon on the side and serve it with warm milk on the top! The original recipe is in the photo and my tweaked version is below.
Baked Oatmeal Recipe
2/3 cup oil / I use coconut oil
3/4 cup sugar
3 cups oats
1 cup milk / I use almond
1 tsp baking powder
1 cup applesauce
2 tsp vanilla
1/2 tsp pink Himalayan salt
1/2 cup blueberries
Preheat the oven to 350. Mix all ingredients together in a corning ware dish. Bake for 25 minutes until the top is a little crispy on the edges. Stick a tooth pick in the middle to make sure it isn’t too soft. And viola!
Grab some almond milk or your local dairy farmer’s milk and pour some on top! It’s absolutely delicious. Let me know if you try it :)
